Homemade Wholemeal Tagliatelle


A great recipe to learn, and impress your friends and family :)

Ingredients (serves 2):
* 180g wholemeal flour
* 2 x large eggs
* extra flour for dusting

Instructions:
Flour and eggs into a food processor, blend up until the dough looks like large breadcrumbs. Tip out onto a dry clean surface, and knead for 5 minutes.

Once smooth, and not sticky. Flour a rolling pin, and roll out in one long sheet of pasta. Remember keep flipping over, and rolling on both sides.

Cut the large sheet in half, and flour both sides for each piece. Roll up each piece from longest ends, and slice into chosen shapes.

Carefully unravel each piece, and the pasta is now ready to cook.

Ultimate Egg Mayonnaise Sandwich


Ingredients (serves 1):
* 2 large eggs
* small handful of finely diced chorizo
* 3 slices of wholemeal bread
* iceberg lettuce
* 1 tbsp mayonnaise
* 1/2 tsp dijon mustard
* pepper


Instructions:
Bring a small saucepan of water to the boil, and gently drop in two eggs. Leave in the boiling water for 8 minutes. During this time, butter the bread with lettuce on top and fry off the chorizo until crispy.

After 8 minutes drain off the boiled water, and cover the eggs with cold water keeping them in saucepan. Peel off the egg's outer shell and smash in a separate boil.

Add the mayonnaise, cirpsy chorizo, dijon mustard and generous amount of pepper. Give this all a big mix and spread over the buttered bread.

Chewy Oatmeal & Raisin Cookies


We love baking cookies, and this healthier option is great!

Ingredients (Makes 12):
* 100g oats 
* 100g whole wheat flour
* 1 ½ tsp baking powder
* 1 ½ tsp ground cinnamon
* pinch of salt
* 3 tbsp coconut oil
* 1 large egg, room temperature
* 1 tsp vanilla extract
* 10 tbsp runny honey
* 40g raisins

Instructions:

Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the honey. Combine with the dry mix, stirring just until incorporated. Throw in the raisins. Chill for 30 minutes.

Preheat the oven to 160°c, and line a baking tray.

Mould the cookie dough into 12 balls onto the prepared baking tray, and flatten slightly. Bake at 160°c for 11-15 minutes. Cool for 10 minutes before leaving them out onto a wire rack.

Lean Spagehtti Bolognese



A great after work meal, packed full of flavour. And quite lean.

Ingredients (serves 2):
* 250g lean beef mince,  (less than 5% fat). Turkey mince is better
* wholemeal spaghetti
* 400g chopped tomatoes
* 150g button mushrooms
* medium carrot
* small red onion
* 1 garlic clove
* 2 tbsp soy sauce
* 1 tbsp oregano
* 1 tsp ground cumin
* coconut oil
* salt + pepper

Instructions:
Sweat the finely diced red onion in the pan. Add in your mushrooms into the mix with crushed garlic. Stir all together until moisture is extracted.

Chuck in the grated carrot and give another mix. Once everything starts to give off extra moisture add your minced beef or turkey mince. Cook the mince until nice and golden brown.

Add your chopped tomatoes, with oregano, soy sauce, ground cumin, salt and pepper. One more mix through and leave to simmer for 20-30 mins. Longer the better, for maximum flavour.

Serve immediately once the spaghetti is cooked. We used wholemeal to keep with the the healthier theme.

Prawn Singapore Noodles


You can definitely make this in 15 minutes, so the perfect midweek meal :)

Ingredients (serves 2):
* 180g raw king prawns
* 300g singapore noodles
* 2 garlic cloves
* 300g mixed vegetables (peppers, carrots, onions, bean sprouts etc)
* 1 tbsp curry powder
* 3 tbsp water
* 1 tsp dried coriander
* 1 tsp chilli flakes
* 2 tbsp soy sauce
salt and pepper
" 1 tbsp vegetable oil

Instructions:
Crush the garlic and fry off in a wok with vegetable oil. Add the king prawns just before the garlic turns brown. Keep frying together with the prawns until their turn pink. Take off the heat and leave in a bowl for later.

Throw the mixed vegetables into the wok,  and once the veg starts to soften chuck in the noodles and remember to keep mixing it all together.

Stir the water and curry powder together and add into the mix. Return the king prawns and heat them through.

Finish with coriander, chilli flakes, soy sauce and seasoning. Give them all a good mix and serve immediately.

Healthy Blueberry + Oat Muffins


Sometimes you can making baking into something healthy :)

Ingredients (makes 12):
* 170g oats
* 2 large ripe bananas
* 2 large eggs
* 250g yogurt (We used Alpro Plain with Coconut yoghurt)
* 2 tbsp honey
* 2 tsp baking soda
* 1/2 tsp vanilla extract
* Pinch of salt
* 2 handfuls of blueberries – half chopped, half whole

Instructions:

Preheat the oven to 210 degrees. Lightly grease a 12-cup standard muffin tin.

Place the all ingredients except the blueberries in a blender or a food processor and blend, stopping to scrape down and stir the ingredients once or twice as needed, until the batter is smooth and the oats have broken down almost completely.

Use a spoon to pop some batter into the muffin tin. Once a bottom layer has been placed in the tin, sprinkle 4-5 chopped blueberry pieces in each of the muffins. Spoon some more batter on top, and then top with the whole blueberries.

Bake for 15-20 minutes, until the tops of the muffins set and a toothpick inserted in the centre comes out clean.

White Chocolate Creme Egg Rocky Road


You got to treat yourself at Easter, so why not try these!

Ingredients (Makes 12)
For the rocky road:
450g white chocolate
100g digestive biscuits
60g mini marshmallows
8 mini creme eggs

For the top:
8 mini creme eggs
½ small bar of milk chocolate
1 tbsp icing sugar
1 tsp orange food colouring
Dash of water

To make the rocky road, pop half of the white chocolate into a bowl and pop into the microwave, stirring every 10 seconds. Once the chocolate had fully melted, add the other half of the white chocolate, stir in and microwave until fully melted.Leave to the side for 5 minutes while you crush the biscuits up and halve the mini creme eggs. Add the crushed biscuit, mini marshmallows and crème eggs into the bowl of melted chocolate and stir so everything is evenly coated.

Line a square baking tin with greaseproof paper and add the mixture in. Melt the milk chocolate for the topping and mix up the icing sugar, orange colouring and water. Pop the rest of the halved creme eggs on the top, then drizzle with the melted chocolate and then the orange icing.


Pop in the fridge for at least one hour…then slice up and enjoy!

Beef & Broccoli Stir Fry


A great quick and easy midweek meal!

Ingredients (serves 2):
* 250g diced beef
* 1 small broccoli
* 4 spring onions
* 1 egg (whites)
* 1 tbsp plain flour
* 2 tbsp dark soy sauce
* 1 tbsp agave nectar
* 1 tbsp sesame seeds
* brown rice
* vegetable oil

Instructions:
Pop the brown rice in boiling water so it will be ready once the beef and broccoli is finished!

Chop up the broccoli into florets and steam them for around 10-15 mins. Crack an egg into a bowl, remove the yolk and mix in with the flour. Use this mixture to coat the beef. To make the sauce, add soy sauce, agave nectar (or honey if you prefer) and sesame seeds in a bowl and mix up together.

Once the wok is heated,  add some vegetable oil and chuck the beef in. Once the beef is browned, pop the wok onto a lower heat and add in some chopped spring onions and the soy/agave sauce. Add in the steamed broccoli and fry for a few minutes.

The rice should now be ready! Serve the beef and broccoli stir fry on a bed of brown rice, with some extra soy sauce on top!

Mighty Meatzza (meat base pizza!!) #comfortfood


Can't decide on a burger or pizza, why not combine the two ;)

Ingredients (serves 4):
Sauce
* 250ml passata
* 1 garlic clove
* 1 small white onion
* 1 tbsp dried basil
* 1 tbsp balsamic vinegar
* dash of worcester sauce

Base and toppings
* 500g 5% fat beef mince
* 1 egg
* 1 tbsp dried oregano
* 1 tbsp paprika
* 2 mushrooms
* 1/2 red & yellow pepper
* 1 tbsp dried basil
* mature cheddar
* mozzarella

Instructions:
To make the sauce, chop up an onion and pop in a frying pan with a little oil. Fry until the onion is softened and then add the passata and crushed garlic. Stir together and add the rest of the sauce ingredients. Leave to simmer while you make your meat base.

Preheat the oven at 175c. Pop the mince and egg in a bowl and mix together. Season with oregano, paprika, salt and pepper and mix through again. Grab a springform tin and spread the mince out evenly across the bottom. Once this is even and compressed, pop in the oven for 10 minutes. While this is in the oven, chop up the mushrooms, peppers and prepare the cheese.

Take the base out of the oven (and pat the top if a little bloody). Spread the sauce on the top, followed by mozzarella, mushrooms and peppers. Add a little grated cheese and dried basil on top and place back in the oven at 200c for 25 minutes.

Fluffy Mashed Potato


This is a good recipe to perfect!

Ingredients:
* 2 x large baking potatoes
* 1 tbsp dried chives
* 2 tbsp butter
* 1/2 tsp dijon mustard
* salt

Instructions:
Peel and dice your potatoes into large cubes. Into a saucepan with water and a pinch of salt. Crank up the heat.

Once the water is boiling, reduce the heat and leave the potatoes to simmer for 15 minutes.

When a knife glides through the potatoes, they're ready. Drain off the water, add the butter, chives and dijon mustard. Mash through the potatoes until nice and fluffy.

No bake lemon cheesecake


Ingredients (serves 6):
Base
* 200g digestive biscuits
* 50g unsalted butter
* 25g brown sugar
* 1 tsp vanilla extract

Filling
* 350 mascarpone cheese
* 75g caster sugar
* 1 tsp vanilla extract
* zest of 1 lemon
* 7 tbsp of lemon (3 lemons)

Instructions:
Blitz up your digestive biscuits In a food processor. Pop a saucepan on the hob and melt the butter. Once melted, add the brown sugar and biscuit and stir together, adding a tsp of vanilla extract. Once the mixture is fully combined, grab a springform tin and spread the biscuit on the base evenly. Pop in the fridge to set while you whip up the topping!


Squeeze the juice from two lemons and zest one. Add the sugar, 7 tbsp lemon juice, zest, mascarpone cheese and 1 tsp vanilla extract and beat together until fully combined. Take the base from the fridge and layer the cheese topping on top of the biscuit base. Once evenly spread, pop in the fridge to cool for at least two hours.

Heart Shaped Shortbread with OfficialEShaw

Ingredients (makes 20):
* 125g/4oz butter
* 55g/2oz caster sugar, plus extra to finish
* 180g/6oz plain flour

Instructions:

Heat the oven to 190C/375F/Gas 5.Beat the butter and the sugar together until smooth.

Stir in the flour until a breadcrumb consistency. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.

Cut into heart shapes and place onto a baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes.

Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.

Healthy Oat & Banana Pancakes



Ingredients (makes 8)
* 1 ripe banana
* 90g rolled oats
* 300ml Alpro coconut yoghurt
* 2 eggs
* 1tsp vanilla
* 1tsp baking powder
* Strawberries and agave nectar to serve

Instructions
Add all the ingredients into a food processor and blitz up until smooth.

Pop the oven on a low heat to keep your pancakes warm...Put a pan on a medium heat, add a little oil and scoop a little pancake batter into the pan. The pancake is ready to flip once it begins to bubble!

Place in the oven to stay warm while you cook your whole stack! We enjoyed ours with berries, agave nectar and a dollop of Alpro coconut yoghurt!

Ultimate Omelette


Ingredients (serves 2):
* 3 x eggs
* 1x tomato
* 1/2 red onion
* handful of diced chorizo
* handful of green beans
* 20g grated cheese
* tsp butter
* salt / pepper

Instructions:
Preheat your grill. Pop the butter in the pan on a medium heat. Dice the onion up and fry until softened. Then add the chorizo and cook for a couple of minutes, followed by the green beans and then the tomato.

Crack three eggs into a bowl and beat together. Season with salt and pepper and add the egg mixture to the pan - making sure the fillings are evenly spread. Keep on the hob for a couple of minutes before topping with grated cheese and popping under the grill to finish cooking.

Healthy Chocolate Milkshake (Vegan)


Ingredients (Makes 2):
* 2 x bananas
* handful of dates
* 1 tbsp agave nectar
* 1 tbsp almond butter
* 2 tbsp cacao powder
* (200ml) coconut milk

Instructions:

Chop up the dates and the bananas, throw them into your blender followed by the other ingredients. Blend into a smooth shake, and enjoy :)

Halloumi & Carrot Fritters



Halloumi is one of our favourite cheeses, it works so well in these fritters. YOU MUST TRY!

Makes (12):
* 2 x carrots
* 2 spring onions
* 130g halloumi
* 1 tbsp smoked paprika
* 1 1/2 tbsp plain flour
* 1 egg
* vegetable oil

Instructions:
Grate the carrot and halloumi and pop them in a bowl. Mix together and then add the spring onions and mix again. Once all mixed through, Add the flour and 1tsp of paprika and mix in. Beat an egg and then add this to the mixture and stir until all the mixture is coated.

Pick up a small handful of the mixture and shape into a patty shape. Place on a board while you form the rest of the fritters and pop in the fridge for around 30 minutes to help them stay in shape.

Then add some vegetable oil into a frying pan for a shallow fry. Once the oil is hot, add the fritters and fry on each side for a few minutes each. If your pan isn’t big enough to fry them all at once, pop them on a plate in the oven so they stay nice and warm :)

Homemade Steak & Ale Pie


A proper good winter warmer. Takes a while to make, but so worth it!

Ingredients (serves 2):
* 250g diced beef
* 1 white onion
* 1 carrot
* 6 mushrooms
* 1 clove of garlic
* 1 tbsp parsley
* 1 tbsp thyme
* couple of bay leaves
* 250ml beef stock
* 250ml ale
* 1 1/2 tbsp plain flour
* 220g butter beans
* 400g short crust pastry

Instructions:
Preheat the oven to 180c. Pop the beef into a pan and fry until the outside is browned. Place this in a casserole pot to the side and then fry the onions, garlic and carrot. After 3-4 minutes add the mushrooms to the mixture and fry for a further couple of minutes. Pop these in the casserole dish and add some beef stock, ale, flour and herbs before placing in the oven for 1 hr 30 mins.

After 1 hr 30 mins, drain the butterbeans and add the to the mixture. Place in the oven for a further 15 minutes. While this bubbles away in the oven, prepare the pastry. Roll this out and get it ready to top your pie! Once the pie mixture is cooked, place it in a pie dish and leave to cool for 15-20 minutes (until it stops steaming!!). Beat an egg and eggwash the edges of the dish before you add the pastry top and trim down to size. Eggwash the top of the pastry, add some cuts and any pastry decorations you wish! Bake for 30 minutes and enjoy!
